This is one of those recipes that you quickly file in your memory and rarely need the recipe for. Mexican inspired Haystacks are lite and packed with flavor, perfect for a hot summer day. My family especially loves it when I make this meal so I always make extra.Â

Rice or Quinoa
Bunch of Cilantro

1 1/2 Lbs Ground Turkey or meat of choice
1 Onion, Chopped
1 Tbs Garlic Powder
4 Cups Salsa
Salt and Pepper to taste
2 Tbsp Almond Butter
- Toppings
1-2 Avocados
1 Red Pepper, Chopped
2 Ripe Mangoes, Cubed

Directions
Start your rice or quinoa on the stove, or in a rice maker. Next, add ground turkey and chopped onion to a large saute pan. Add garlic powder, salt and pepper. When the turkey is browned, add 4 cups of salsa and almond butter. Bring the salsa to a boil and then reduce the heat to a simmer. Cover and simmer for about 20 minutes. In the meantime, chop the cilantro, pepper, avocado, and mango. When the rice is done, simply stir in almost all of the fresh cilantro, leaving just enough to garnish each dish. Use a measuring cup (or a cookie cutter) scoop rice onto your plate, top with meat mixture. Add your toppings and enjoy!

This recipe is easily converted to fit the candida diet with a few simple changes. Make sure you are using Quinoa or wild rice. Substitute ground turkey or chicken for the ground beef. You will need to buy sugar free salsa or make your own without adding any sugar. If you are on the strict candida diet you need to omit the mangoes completely and substitute with a less sugary fruit. You could omit the fruit topping completely if need be. Most importantly, enjoy your new candida diet recipe!
