I have to share this recipe for the best chicken soup ever! It is so good and all of our kids LOVE it! We rarely, if ever have any leftover, its that good. This recipe is not your classic chicken soup, it’s entirely different and you must try it. You will definitely agree that its the best chicken soup you have ever had!
The best chicken soup ever
What makes this the best chicken soup? It’s the southwest flavors and the ability to cater to your own taste buds. What I like to do is make the soup base then let everyone add in the other ingredients. Some of us like more spice, some like more cheese and others don’t like chickpeas. Giving everyone the ability to specialize their own meal makes everyone happy, including mom and dad! I hope you enjoy this recipe as much as our family does.
This soup my whole family loves! We will eat this soup anytime of year, but if we are batteling a cold this is our “healing” soup. Buen Provecho!

Chicken Soup with Avocado, Chickpeas and Cilantro

1 Whole Chicken
3-5 Bay Leaves
2-3 Garlic Cloves
1-2 Cans Garbanzo Beans
1-2 Avocados
Cilantro to taste
Mexican Cheese
La Costena Chipotle Sauce
Water - enough to cover the entire chicken
Directions
- In a stock pot add water, bay leaves, garlic and thawed, emptied chicken
- Boil chicken until the meat pulls away from the bone
- Turn off burner, remove chicken from pot and let cool
- Drain Garbanzo beans and add them to the broth/water in stock pot
- Once chicken is cool remove meat from bone and return to stock pot with broth and turn heat back on
- Slice avocado
- Chop cilantro
- Serve warm soup in bowls
- Garnish soup with avocado, cilantro, chipotle sauce and cheese. Enjoy!
Notes
- Garnish soup with toppings to your taste.
